Paleo Protein Pancakes


Using nut meal and natural sweeteners, these high protein pancakes from our friends at Power Super Foods are very light and healthy... until you start loading them up with all manner of tasty goodies! Plan ahead and serve with a hint of Coyo, superberries, pepitas and banana.

ingredients

1 cup almond or hazelnut meal flour 
1/2 tsp baking soda 
1/4 tsp fine Pink Salt 
1 tbsp full fat coconut milk 
1 tbsp honey or 2 drops of stevia 
1/2 tsp of vanilla extract 
zest of 1/2 a lemon 
2 large organic, free-range eggs 
1 tbsp coconut oil for frying in pan

method

Combine dry ingredients first, except the lemon zest, in one bowl and in another bowl, mix the wet ingredients. 
Then combine wet with dry ingredients. 
Fold in lemon zest. 
Fry in small portions in the pan. 
These are very delicate pancakes so cook them one at a time and in smaller sizes so they're easier to flip. 
Serve warm with organic maple syrup and shredded coconut.
