Ginger Spice and Honey Loaf


2 cups Organic whole-wheat flour – separate into two individual cups of flour
½ cup Pureharvest Soy Milk – or Oat, Rice or Coco Quench*
¾ cups Organic Honey - or Pureharvest Organic Rice Syrup
½ cup Organic Sunflower oil - or Coconut Oil
2 Organic eggs
1 ½ teaspoons cinnamon, nutmeg and cloves
2 teaspoons ground ginger
zest of two oranges
1 ½ teaspoons baking powder
1 teaspoon bicarbonate of soda


Preheat a fan forced oven to 160 degrees Celsius. 
Oil a loaf tin, measuring roughly 11cm wide by 26cm long. Feel free to use a regular cake tin if you do not have a loaf tin.
Sift together one cup of the flour, spices, baking soda, bicarb soda and orange zest in a medium-large sized bowl.
Heat the honey and milk in a saucepan over a medium-low heat, until the honey has melted through, then remove from the heat. Add the oil to the warmed mixture and the other cup of flour and mix together.
In a separate bowl whisk together the two eggs until frothy.
Combine the honey flour mixture with the eggs and the other dry ingredients.
Once well mixed together, spoon the mixture into the already prepared loaf tin.
Bake in the oven for about 35-40 minutes, or until a skewer inserted into the centre of the cake comes out clean.
