Chocolate Buckini Crackles

This sophisticated twist on an old school fete favourite has been adapted from Meaghan Tarrant's recipe on the Loving Earth site. Just in time for Easter and no refined sugar in sight. Enjoy.


Ingredients

1 cup of Caramelised Buckinis
½ a cup of puffed millet or quinoa
1 big dollop of Cocopure Chocolate Coconut Butter
½ cup Fine Coconut
2 tbsp. Drinking Chocolate

Method

Melt down the coconut butter over a double boiler, slowly add in the caramelised buckinis, puffed grain and fine coconut whilst continuing to stir, add in the drinking chocolate too. Dollop onto a patty cases and leave to set in the fridge for approximately 4 hours. Drizzle with some melted chocolate to finish.
